Junk Chocolate Ginger cookies
These don’t last long around the house! I’ve adapted them over the years to create this heavenly droplet! I call them Junk Chocolate because I use what ever chocolate I’ve got. This batch was 1 milk Chocolate candied almond Toblerone bar and 6 squares of dark chocolate!
Freshly grated Nutmeg, a pinch or three of candied ginger and Dark Brown sugar are a few of my favorite things.(oh, and little hands!)
Oven to 375 Bake 9-12 min
- 2 1/4 cp flour
- 1/2 tsp salt
- 1 tsp baking soda
- 1 tsp cinnamon
- 1/4 tsp freshly grated nutmeg
- 1 Tbs flax flake
- 2 sticks butter, softened
- 3/4 cp raw sugar
- 3/4 cp dark brown sugar
- 2 eggs, room temp
- 2 tsp vanilla
- 1 1/2 cp dark chocolate, chopped
- 1 cp pecans, finely chopped
- 2 Tbs candied ginger finely chopped
- 1 cp oats
In small bowl, combine flour, salt, baking soda, cinnamon, nutmeg and flax flake, whisk together.
In large bowl add butter and sugars, blend until JUST combined, add vanilla and eggs one at a time, mixing until JUST combined after each addition. Be mindful not to over mix.
Add dry ingredients in thirds. Add chocolate, nuts and oats and ginger. Mix well.
Chill in the refrigerator at least 1 hour (don’t skip this step. It really makes for a better cookie)
Form small teaspoon’s of dough onto a baking sheet.
Bake 9-12 minutes, turning pan halfway thru.
Three key things that make these so delish, don’t over mix, chill! And make them small!
