Since my last post, the bread making has been coming along! Lots of trial and error, but it is all about the process, and I know my patience will pay off. Sarah and Sally Sourdough are alive and fermenting, and having to take care of them has actually been pretty cool and quite gratifying.
What I also tried making for the first time was homemade lemon curd! My romance with lemons (heck, any citrus fruit at all) has been long. I love the fragrance, the color, not to mention the zingy, tangy taste!
I looked up a few recipes; I saw many. Some were quite complicated, and this time I was looking for an easy method. I ended up using a Taste of Home recipe, since they are pretty famous for their easy, family recipes. Jocelyn and I used to go to a lot of their live cooking shows, absolutely laying the groundwork for Northwest Nibbles, without even knowing it at the time! We have come a long way since then, but I love the memories and I still look to them for quick ideas!
Needless to say, a few ingredients and simple steps later...WOW! I had beautiful, tangy, scrumptious lemon curd! I brought it to Mom's for our Easter brunch. It was a fast hit! Mom made lemon pound cake for us to serve it with, and the combination was heaven! It keeps great in the refrigerator and I actually ate some right out of the jar! You can use just about any citrus fruit. Next time I might try grapefruit! Give it a try!
